A Brief History About Teriyaki Sauce

Teriyaki sauce is a type of sauce derived from teriyaki. The work teriyaki actually refers to a cooking technique used in many Japanese cuisines in which food is broiled or grilled with a glaze of soy sauce, mirin (rice wine), and sugar. This is thought to have originated around the 17th century in Japan. It is said that the history of teriyaki sauce can be traced back to early Japanese immigrants who settled in Hawaii. These immigrants created a distinct marinade using local products such as pineapple juice, and they blended these products with soy sauce. This means that, despite teriyaki originating in Japan, the teriyaki sauce we know and are familiar with today originates in the U.S. As teriyaki sauce started to pick up steam, there have been changes to the recipe, typically with the goal of making it sweeter. Teriyaki sauce today is commonly used with meat products such as chicken, beef, etc.

  1. Heat the soy sauce, water, sweet rice wine, brown sugar, honey, garlic clove, and fresh ginger in a small saucepan over moderately high heat. When the mixture reaches a simmer, bring the heat down to low and allow to reduce for 10 minutes
  2. Transfer to a small bowl, allow it to thicken as it cools
  3. (optional) If you want a thicker glaze, pour a tablespoon of the mixture into a small bowl. Add a teaspoon of corn starch to the small bowl and whisk until it completely dissolves. Add the corn starch mixture to the teriyaki sauce and whisk until dissolved
